Peach + Yogurt Popsicle
When peaches come into season you better believe that I will eat at least two a day, if not three. I believe that when something is in season and abundant that you should eat as much as you would like. Obviously, you can get peaches year round at the super market but it really doesn’t compare to eating a peach right off of the tree, with the juices running down your arm. I teamed up with Eckert’s to bring you my recipe for Peach + Yogurt popsicles, my play on peaches and cream.
Eckert’s offers pick your own peaches and are currently picking Red Haven peaches. Picking hours are Sunday-Thursday 8am-6pm and Friday-Saturday 8am-7pm. Brittany and I always have a blast whether it’s just us or we have the nieces and nephews with us. In fact we are heading to Eckert’s this Sunday to pick peaches with the family. If you don’t feel like picking your own they also offer tree ripened peaches in their country store along with just about anything else that you would need to make dinner and a dessert.
In this recipe I have chosen to keep the yogurt and the peach puree separate to get the marbled look along with the contrast in texture but you could easily mix it all together for a quicker and more uniform approach. Also, I have strained the peach puree before freezing but, you could skip this step if in a hurry or you don’t have one.
Ingredients
· 4 cups peach slices
· ½ cup honey
· 1 cup milk or cream
· 2 cups plain greek yogurt
· 2 tablespoons apple cider vinegar
Directions
Combine yogurt and half of the honey in a small mixing bowl and stir to combine
Place peaches, milk or cream, remaining honey, and apple cider vinegar in a blender and blend on high for 30 seconds or until smooth. Strain through a fine mesh strainer to remove skins and some of the pulp making it smooth.
Alternate placing the peach puree and yogurt into the popsicle mold in about three different batches. Place the top on along with the sticks and place in the freezer overnight. Next day run a bit of warm water on the outside of the mold to help release the popsicle and enjoy!
