Boozy Bourbon Parfait

 

What’s better then bourbon, biscuits, fruit and cream you ask? Boozy bourbon parfait of course,  all of that together in a cup layered so that each bite holds a completely different experience.

 Adding bourbon to almost any dessert makes it better, and I have partnered with Jim Beam to bring you this awesome recipe for a boozy bourbon parfait. Their new vanilla infused bourbon pairs perfectly with fresh fruit, homemade biscuits and whipped cream. You could easily make these the day ahead so that when you need them they are ready to go, just skip the last layer of cream along with the garnish. Wrap tightly with plastic wrap and place in refrigerator. When ready remove plastic and finish with the last bit of whipped cream and the mint.

You will probably have a couple biscuits left over. Feel free to freeze them to remake this recipe or use them for your favorite biscuit dish.

Ingredients (Makes 6)

·         1 stick butter

·         3 cups all-purpose flour

·         1 tablespoon baking powder

·         2 teaspoons salt

·         1 ½ cup whole milk

·         1 pint black berries

·         3 bananas

·         1 cup heavy whipping cream

·         5 tablespoons sugar

·         3 tablespoons Jim Beam Vanilla Bourbon

·         Couple sprigs of mint

Directions

Place blackberries in a small bowl and add 1 tablespoon bourbon along with 1 tablespoon sugar, do the same with the banana in a separate bowl

Preheat oven to 400°F and line a baking sheet with parchment paper; alternatively line a baking sheet with parchment paper

In a large bowl, whisk together flour, baking powder, and salt

Toss butter into the dry ingredients until coated with flour. Working quickly and using your fingers or a pastry blender, rub or cut butter into flour until it resembles coarse meal. Alternatively, add flour mixture and butter to food processor and pulse 2 to 3 times to form pea-sized pieces; transfer to a large bowl.

Add milk and stir with a fork until it just comes together into a slightly sticky, soggy dough.

Portion with a 2 2/3 ounce portion scoop or a 1/2 cup dry measure (Should yield about 8)

Bake biscuits until golden brown, about 24 minutes, rotating half way. Let cool slightly, then transfer to wire rack.

Take whipping cream and 3 tablespoons sugar and place in the bowl of your stand mixer. Place bowl with cream in your freezer for five minutes to ensure that everything is nice and chilled. Using the whip attachment beat on medium for about 5 minutes or until soft peaks are formed. Add 1 tablespoon of Jim Beam Vanilla and beat on high for 10-20 seconds. Reserve in the fridge until ready to use.

When the biscuits are cool break or cut into small pieces, grab six large rimmed glasses.

Layer biscuits, blackberries, bananas, cream in that order twice and finish with a bit more cream. Top with mint and enjoy.
